Rehydrate an assortment of dried fruits (such as sliced apples, apricots, tart cherries) in hot water until softened; drain and toss with sugar and a little cinnamon. Line a pie dish with bottom crust. Pile in the mixed fruit filling (with a bit of its soaking liquid for moisture) and dot with butter. Cover with top crust, seal and vent. Bake at 400?F initially, then lower to 350?F, until crust is golden and filling is bubbling (approx. 45?50 min). Cool before serving..
