Apricot Cream Pie

  1. Simmer dried apricots in water until soft, then drain and chop. Line a pie pan with crust. In a bowl, whisk eggs, sugar, a little flour, almond extract and heavy cream to make a custard base. Stir in the softened apricots. Pour into crust. Bake at 350?F until custard is set and lightly golden (about 45 min). Cool and serve with whipped cream..
